Vegetable satay noodles
A quick and easy vegetable noodle dinner, made with your favourite peanut butter. Perfect for dinner and lunch the next day.

- 200g dried noodles
- 1 cup frozen green beans, broccoli and sugar snap peas
- ⅓ cup crunchy peanut butter
- 1 Tbsp minced ginger
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce

- Chilli Oil
- Spring onion
Method
- Bring a pot of water to the boil, season with salt and cook noodles to packet instructions. Reserve a cup of pasta water. When nearly cooked, tip your frozen veggies into the pot and blanch for 30 seconds. Drain and set aside.
- In a large bowl, combine peanut butter, ginger, garlic, soy sauce and reserved pasta water and whisk.
- Add your cooked noodles and veggies and mix well to combine. Serve immediately.
Tip:
- Spice up these noodles with a drizzle of chilli oil for a little kick. This recipe is a great base to add protein to, cooked prawns or shredded chicken would work great as an addition. Or to keep it vegetarian, a fried egg would be delicious.
