One pot greek-inspired baked beans

Our Greek-inspired baked beans are a simply divine one-pot vegetarian meal. With a rich tomato sauce, creamy butter beans and feta to top it off, this delicious dish will be on the table in under an hour.

Ingredients

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • ½ tsp ground cinnamon

  • 1 tsp dried oregano

  • 1 Tbsp tomato paste

  • 2 cans (800g) chopped tomatoes

  • 1 can (400g) butter beans, drained and rinsed

  • 100g feta

  • Bread of your choice

Method

  1. Preheat your oven to 160°C fan bake. Sauté the onion, garlic, cinnamon and dried oregano in a large ovenproof pan with a drizzle of olive oil for a few minutes until softened.

  2. Add the tomato paste and cook for a minute before adding the tomatoes, beans and a cup of hot water. Season to taste and bring to a simmer.

  3. Once simmering, transfer to the oven to bake for 40-45 minutes or until the sauce has thickened.

  4. While hot, crumble the feta over the top and serve with toasted slices of bread.

Top tip: Garnish with torn parsley leaves and serve with dressed green salad for a tasty finish to this dish.
