Ingredients
1 onion, finely chopped
3 garlic cloves, minced
½ tsp ground cinnamon
1 tsp dried oregano
1 Tbsp tomato paste
2 cans (800g) chopped tomatoes
1 can (400g) butter beans, drained and rinsed
100g feta
Bread of your choice
Method
Preheat your oven to 160°C fan bake. Sauté the onion, garlic, cinnamon and dried oregano in a large ovenproof pan with a drizzle of olive oil for a few minutes until softened.
Add the tomato paste and cook for a minute before adding the tomatoes, beans and a cup of hot water. Season to taste and bring to a simmer.
Once simmering, transfer to the oven to bake for 40-45 minutes or until the sauce has thickened.
While hot, crumble the feta over the top and serve with toasted slices of bread.
Top tip: Garnish with torn parsley leaves and serve with dressed green salad for a tasty finish to this dish.
