Omelette wrap
Super easy no carb wraps in under 15 minutes. These omelette wraps are filled with fresh baby spinach, tomato and grated parmesan. Have on their own as a tasty snack or as part of a light light or dinner.

- 4 eggs
- Handful of fresh parsley, roughly chopped
- ½ cup baby spinach
- 2 vine tomatoes, sliced
- ¼ cup grated parmesan
Method
- In a large bowl, beat together eggs, parsley, salt and pepper until well combined.
- Bring a drizzle of oil to medium-high heat in a medium frying pan. Pour in half of the mixture and swirl the pan, if necessary, so the egg mixture completely covers the bottom.
- Cook for a few minutes or until the egg is set. Remove from the pan and place on a board or plate. Repeat with the remaining mixture.
- Add spinach, tomatoes and parmesan to the centre of each wrap, then roll tightly.
- Serve and enjoy.
