Golden rice pilaf
Fluffy golden rice pilaf made with aromatic basmati Fortune Rice is a meal the whole family can enjoy. This fragrant vegetarian dish is lightly spiced, full of flavour and topped with fresh coriander. It’ll be on your table in under 40 minutes.

- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- ½ tsp ground turmeric
- ½ tsp ground paprika
- ½ tsp chilli powder
- 2 cups basmati Fortune Rice, rinsed
- 3 ½ cups vegetable stock
- Large handful of coriander leaves, roughly chopped
Method
- Bring a drizzle of olive oil to medium-high heat in a large saucepan. Sauté the onion, carrot and garlic for 4-5 minutes or until softened.
- Add the turmeric, paprika, chilli powder, salt and pepper. Cook for a minute or until fragrant.
- Stir in the rice and cook for a few minutes to toast the rice.
- Pour in the vegetable stock and bring to a boil. Once boiling, reduce to a simmer, cover and cook for 15-20 minutes or until cooked through and the liquid has absorbed.
- Remove from the heat and leave covered for 10 minutes, then fluff the rice with a fork. Scatter over coriander leaves just before serving.
Top tip: Add a touch of sweetness to your golden pilaf with a large handful of diced dried apricot mixed in with the vegetable stock.
Complete the dish with toasted pumpkin seeds and pine nuts or almonds for an added crunch.
