BBQ corn ribs with chipotle mayo
You won’t be able to keep your hands off these beautiful BBQ corn ribs dipped in chipotle mayo. Coated in a premade Mexican spice mix for your convenience and built in flavour. They’re just waiting to be devoured.

- 4 corn cobs
- 2 Tbsp Mexican spice mix
- 2 cloves garlic, minced
- ½ cup mayonnaise
- 1 lime
- 3 Tbsp chipotle
- ½ onion, sliced and fried
- Large handful coriander, chopped
Method
- Preheat your BBQ to medium-high heat.
- Prepare the corn by using a sharp knife to trim off the ends. Cut each cob in half crosswise and snap if necessary to break through the core. Stand the corn cob halves upright and cut in half then lie flat and cut each in half again, to make 8 ribs per cob.
- In a large bowl combine Mexican spice mix, garlic and a generous drizzle of olive oil. Season with salt and pepper and mix well to combine. Add the corn and toss to combine. Brush the BBQ with oil and grill the corn for 8-10 minutes or until lightly charred.
- To make the chipotle mayo, combine mayonnaise, lime zest and juice and chipotle in a small bowl and mix until well combined.
- Garnish the corn ribs with fried onion and coriander and serve alongside the chipotle mayo.
Top tip: No BBQ? No worries, these corn ribs can also be cooked in a grill pan until lightly charred.
