Kumara soup
When you’re stuck for dinner ideas during a cold snap, this sweet potato soup recipe is easy, tasty, nutritious and deliciously warming on a chilly winter’s day. Serve with crusty bread rolls or cheese muffins.

- 2 Tablespoon olive oil
- 1 large onion, chopped
- 1 Teaspoon minced garlic cloves
- ¼ - ½ Teaspoon chilli powder
- 2 Teaspoon ground cumin
- 1 Teaspoon ground coriander
- 1 Teaspoon turmeric
- 4 cups stock (eg: chicken stock, vegetable stock, beef stock)
- ¾ cup red lentils
- 2 carrots, diced
- 2 celery stalks, diced
- 1 large kūmara, diced
Cookware: Large saucepan or soup pot, stick mixer or food processor
Method
- Heat olive oil in a large saucepan, add onion and cook until soft.
- Add garlic, chilli powder, cumin, coriander, turmeric, stock and lentils and cook for 20 minutes.
- Add carrots, celery and kūmara and cook until veges are tender.
- Puree half the soup then combine and serve.
Recipe notes
Vegetables and herbs – We love the suggested carrot, celery, onion and kūmara in this soup, but feel free to add in your own favourite veggies and herbs for a variation on a theme. If you’re looking for other tasty vegetarian soups, try our Lentil soup or Rustic autumn vegetable soup.
Spice – If you have people in your family who don’t like spice, feel free to omit the chilli powder to make the recipe milder. Alternatively, you could reduce the stock and add some coconut milk or coconut cream instead – this will make your soup creamier and less punchy.
Garnishes and sides – Top with some toasted coconut chips and fresh coriander or lime for a Thai-style soup.

FAQ
Can I add spices to the mixture for extra flavour?
Sure! Extra chilli powder will increase the kick, as will a teaspoon or two of red curry paste or cracked black pepper. A small amount of lemongrass could also be added to give your dish a Thai flavour.
How long does Kūmara soup last?
Like most soups, this is even better made the day before. Just reheat before serving. It is best consumed within 5 days if stored in the refrigerator.
Can I serve this recipe to vegans?
Yes! Just make sure you use vegetable stock if you’re looking to make it vegan.
