Creamy carrot soup
A kid-friendly soup that’ll have everyone licking their lips. This creamy carrot soup is flavoursome, fulfilling and brilliantly easy. One bowl simply won’t be enough!

- 1 onion, diced
- 6 large carrots, diced
- 3 cloves garlic, minced
- 1 medium orange kumara, diced
- 1L vegetable stock
- 3 Tbsp fresh thyme leaves
Method
- Bring a drizzle of oil to medium-high heat in a large pot.
- Sauté the onion, carrots and garlic for 8-10 minutes or until the carrots begin to soften.
- Add the kumara, vegetable stock and thyme.
- Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes or until the carrot and kumara is tender.
- Using a stick blender or blender, blend the soup until smooth. Season with salt and pepper to taste. Ladle into bowls, then serve and enjoy.
Tips:
- Serve with cheesy soldier toast dippers sprinkled with dried parsley for a meal your tamariki can get stuck into. Garnish your creamy carrot soup with freshly chopped parsley to finish.
