Rainbow fruit salad and honeyed yoghurt

What’s more magical than a rainbow? An edible rainbow with a pot full of honeyed yoghurt on the other side! This rainbow fruit salad is overflowing with fresh and colourful seasonal fruits to create a dish that foodies of all ages can enjoy; cutting the fruit into fun shapes to excite our tamariki!

  • Selection of colourful, seasonal fruits (we used berries, melon, kiwifruit and pineapple) 
  • Juice of half a lemon
  • 1 cup Greek yoghurt 
  • 2 Tbsp Pams Squeezable Honey 
  • 1tsp vanilla essence or extract

Method

  1. Using cookie cutters or a knife, cut larger fruits into fun shapes or pieces. 
  2. Arrange the fruit on a large platter and drizzle over the lemon juice.
  3. Mix the yoghurt, honey and vanilla in a separate bowl, then serve alongside the fruit salad and enjoy.  

Top tip:

Add some texture to your fruit salad with a sprinkling of toasted coconut, chopped pistachios or even your favourite muesli. Let your family choose their favourite toppings.
