Garlic monkey bread bites

Buttery herbed garlic and fluffy bread unite in these beautiful bites. If you’re looking for a delightfully delicious snack that’s full of flavour with a melty mozzarella topping, look no further than these garlic monkey bread bites.

  • 300g high grade flour
  • 2 tsp Pams Active Yeast
  • 1 ½ tsp caster sugar
  • 120g Pams pure butter, softened 
  • 3 garlic cloves, crushed
  • ¼ cup fresh herbs, roughly chopped (we use chives and parsley)
  • 1 cup Pams mozzarella grated cheese 

Method

  1. In the bowl of a stand mixer, combine the flour, yeast, sugar and a teaspoon of salt. Pour ¾ cup of warm water into the dry ingredients and use a dough hook to knead at medium speed until a soft dough forms; adding extra water if the mixture is too dry. 
  2. Add 40g of the butter and knead for around five minutes or until the dough becomes smooth and pliable. Transfer to a greased bowl, cover and proof in a warm place for an hour or until doubled in size.
  3. Melt the remaining butter and mix with the garlic and herbs in a medium bowl. Once proofed, divide the dough into even-sized small pieces, then roll into balls and coat in the butter mixture.
  4. Divide the dough balls amongst a greased 12-hole muffin tray and cover, allowing to proof for a final half-hour or until risen. Meanwhile, preheat your oven to 180°C fan bake. 
  5. Once risen, sprinkle the monkey bread with cheese and bake in the oven for 12-15 minutes or until the rolls are golden brown. Serve and enjoy while warm, or keep stored in an airtight container. 
Top tip

If you don’t have a stand mixer, this recipe can be made by hand! Simply knead the dough by hand on a clean, floured benchtop. The only difference? A little bit of added time, but with a rewarding end result!
