Crispy roast potatoes

When it comes to crispy roast potatoes, the secret’s all in the preparation! Roasting potatoes in Alfa One Rice Bran Oil will make your potatoes deliciously golden brown and crunchy and won’t leave them with an oily aftertaste. Alfa One Rice Bran oil has a significantly lower viscosity than other vegetable oils and olive oil. It, therefore, drains off better in roasting applications leaving your food less oily and your pan easier to clean! You’ll get perfect roast potatoes every time – delicious by themselves or as a side dish in your roast dinner.

  • Roasting Potatoes (Agria, Red Jackets, Red Rascal and Vivaldi are all good varieties)
  • 1/4 cup Alfa One Rice Bran Oil

Cookware: Roasting pan, large pot

Method

  1. Pre-heat your oven to 180 degrees C (350F)
  2. Peel and cut the potatoes and cut into even-sized pieces.
  3. Cook in boiling water for 10-15 minutes until soft to about 0.5cm on the outside, but still uncooked inside.
  4. Drain and set aside for 10-15 minutes or until just cool enough to handle.
  5. Using the tines of a fork, rough up the outside of each potato. This will make them crispier when cooked.
  6. Meanwhile, heat 1/4 cup of Alfa One Rice Bran Oil in a roasting dish in the oven.
  7. Add the potatoes to the roasting tin, then toss them in the hot oil to coat. Bake at 180 degrees C for 45-60 minutes or until golden and cooked, turning the potatoes regularly during cooking so they brown and crisp evenly.

Recipe notes

Oil – We highly recommend using Alfa One Rice Bran Oil for its viscosity and high smoke point, e.g., it can be heated to a high temperature in the oven without smoking. 
However, if you don’t have this on hand, there are a few other types of oil that you can try using for this roast potatoes recipe. If your substitute also has a high smoke point, it should create comparable crispy roast potatoes. Peanut, sunflower, and safflower oils work well, as do goose fat and duck fat. 

Potatoes – Perfect roast potatoes start with the right potato. The higher the starch content in your potato, the crispier it will become in the oven. Agria, Red Jackets, Red Rascal and Vivaldi are some of the best options. Avoid Yukon Gold as it has a lower starch content. 

Seasoning – We think these crispy roast potatoes are amazing on their own. But if you and your family love herbs and spices, feel free to add your own. Chicken salt, thyme, rosemary and garlic and herb salt are a few of our favourites.
