Apricot fudge slice
Morning tea with the whānau just got better with this no-bake apricot fudge slice. Sweet dried apricots, crunchy biscuit pieces and toasted coconut make this a delicious treat.

- 125g butter
- ½ cup brown sugar
- 200g sweetened condensed milk
- 1 cup chopped dried apricots
- 250g super wine biscuits, crushed
- ¼ cup desiccated coconut, toasted
- 1 ½ cups icing sugar
- 1 lemon
- 1-2 Tbsp hot water
Method
- In a small saucepan, melt butter, brown sugar and condensed milk.
- Remove from the heat and stir through apricots and biscuits.
- Press into a greased 20cm x 30cm slice tin and set aside in the fridge while you prepare the icing.
- To make the icing, in a medium bowl mix icing sugar with the juice and the zest of the lemon. Add enough hot water to create a thick spreadable consistency.
- Spread the icing over the slice and sprinkle with toasted coconut. Place in the fridge to set, before cutting into squares.
