Stone fruit caprese inspired salad
Ready in a matter of minutes, this stone fruit caprese-inspired salad is simply delectable. Made with fresh mixed tomatoes, stone fruits, mozzarella cheese, balsamic olive oil and basil.

- 500g mixed tomatoes (we used vine and cherry)
- 3 stone fruit (we used peaches and nectarines)
- 125g fresh mozzarella cheese
- ¼ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- Large handful of fresh basil
Method
- Slice the tomatoes and cut the stone fruit into wedges.
- Arrange the tomatoes and stone fruit on a serving plate or platter.
- Top with torn mozzarella chunks.
- Whisk together extra virgin olive oil and vinegar, drizzle over the salad.
- Sprinkle over salt and pepper. Garnish with basil leaves, then serve.
Tips:
- Sprinkle over red chilli flakes for a spicy version of this salad.
