Add depth of flavour to your meals with these quick and easy DIY condiments using freshly grown coriander, thyme or oregano. A great way to use up fresh herbs!

Thyme garlic butter

  • 250g butter, softened 
  • 2 Tbsp thyme leaves
  • 2 garlic cloves, minced

Oregano infused oil

  • 1 cup olive oil
  • 4 sprigs fresh oregano 

Coriander relish

  • 2 cups packed coriander leaves and stalks
  • 1 tsp ginger, minced
  • 2 garlic cloves, minced
  • 2 spring onions, cut in half
  • 1 cup Greek yoghurt
  • ¼ cup cashew nuts, roasted

Method

Thyme garlic butter

Infusing butter with herbs is a great way to add flavour to all sorts of dishes, including rice, roast potatoes, eggs, grilled meats or even slathered on bread. It’s particularly delicious with roast chicken and is so quick and easy to make with only three ingredients.

  1. In a medium bowl, whisk together the butter, thyme and garlic until smooth.
  2. Use thyme butter immediately or alternatively spoon into a log shape on a piece of baking paper, wrap tightly and refrigerate until firm.

Top tip:

Use this thyme garlic butter to flavour roast chicken. First, pat a 1.5kg whole chicken dry and place it on a roast dish. Rub the butter all over the chicken and tie the legs together if desired. Season with salt and pepper then fan bake at 200°C for 50-60 minutes or until cooked through.


Oregano infused oil

This oregano-infused oil is great as a salad dressing, drizzled over pizza and pasta or used as cooking oil to add an extra level of flavour. It only requires two ingredients to make and gentle heating on a stovetop.

  1. In a small saucepan combine the oil and 3 sprigs of oregano over low heat. Heat for 5 minutes or until fragrant. 
  2. Remove from the heat and allow to cool before straining. Place the remaining oregano sprig into a sterilised bottle or jar and pour in the infused oil. Store in a cool dark place such as your pantry for up to a month. 

Top tip:

This oregano-infused oil can be used to flavour crispy croutons. Simply toast diced bread in the oregano-infused oil until golden brown and crispy. Season and serve with salad or soup. 


Coriander relish

Coriander relish is a great way to use an abundance of coriander. It makes a great finishing touch to all kinds of dishes including curries, nachos, or even roast veggies. Ready in under five minutes, all you have to do is blend all the ingredients together. 

  1. In a food processor or with a hand blender, blend all the ingredients until smooth. 
  2. Use immediately or store in an airtight container in the fridge for up to a week. 

Top tip:

This coriander relish makes a great topping for curries to reduce the heat and add an extra pop of flavour. Spoon over the top of your favourite curry just before eating and enjoy the wonderful flavour addition.
