Curried rice salad
A wonderful way of using cooked rice, this simple recipe goes so well with hot or cold meals, and it’s especially good at barbecues.

- 1 1/2 Cups cooked rice
- 1/4 Cup finely chopped onion
- 1 Tablespoon vinegar
- 2 Tablespoons salad oil
- 1 Teaspoon curry powder
- 1 Cup chopped celery
- 2 Cups cooked green peas
- 1 Cup salad dressing
Method
- Mix cooked rice, onion, vinegar, salad oil and curry powder and refrigerate for 2 hours, then add celery, peas and salad dressing.
- Can be adjusted to suit your taste.
