Browned butter asparagus and peas

Beautifully buttered asparagus tossed with peas and garlic is a winning side dish that’s too hard to resist. Garnished with fresh herbs, it’s easy, effortless and all made in one pan in under 15 minutes.

  • 2 bunches asparagus, trimmed and halved
  • 3 cloves garlic, thinly sliced
  • 2 cups frozen peas
  • 60g butter
  • Handful of fresh herbs (we used parsley)

Method

  1. In a large frying pan, melt the butter over medium-high heat.
  2. Sauté asparagus and garlic for 5 minutes.
  3. Add peas and cook for 4-5 minutes or until the asparagus is tender and the butter has browned.
  4. Season to taste with salt and pepper.
  5. Garnish with fresh herbs, then serve and enjoy.

    Top tip: Crispy shallots and fried diced anchovies made a tasty topping to these buttery asparagus and peas. Complete with a squeeze of lemon before serving for a touch of freshness.
