Whole prawns with garlic butter and watercress

  • 30g butter 
  • 1 Tbsp olive oil
  • 4 garlic cloves, minced 
  • 1kg whole prawns 
  • 1 cup watercress, roughly chopped 
  • Juice of ½ lemon
  • Fresh bread, to serve

Method

  1. Bring a large frying pan to a medium heat. Once hot, add the butter, olive oil and garlic. Cook while stirring for 1-2 minutes to allow the garlic to cook. 
  2. Add the prawns to the pan, and cook while stirring for 3-4 minutes or until all of the prawns have turned pink. 
  3. Stir the chopped watercress through the prawns, then squeeze over the lemon juice. Season with salt and pepper, then serve immediately with fresh bread.
