Whole prawns with garlic butter and watercress

- 30g butter
- 1 Tbsp olive oil
- 4 garlic cloves, minced
- 1kg whole prawns
- 1 cup watercress, roughly chopped
- Juice of ½ lemon
- Fresh bread, to serve
Method
- Bring a large frying pan to a medium heat. Once hot, add the butter, olive oil and garlic. Cook while stirring for 1-2 minutes to allow the garlic to cook.
- Add the prawns to the pan, and cook while stirring for 3-4 minutes or until all of the prawns have turned pink.
- Stir the chopped watercress through the prawns, then squeeze over the lemon juice. Season with salt and pepper, then serve immediately with fresh bread.
