A posh toastie? Whether you're after a quick after school snack or an easy dinner for the family, just make sure you've got planty of cheese! Anika Moa shows us her favourite toasted sandwich fillings.

Pastrami, cheese & mustard:

  • 2 thick slices of bread
  • 50g sliced/shaved pastrami
  • 1/3 - ½ cup sauerkraut
  • ½ grated havarti cheese
  • 1 tsp mustard 

Cheese & onion jam:

  • 2 thick slices of bread
  • 2Tbsp caramelised onion jam or relish
  • Sliced brie 
  • 2Tbsp cream cheese 
  • Handful of fresh rocket 

Ham, cheese & tomato pesto:

  • 2 thick slices of bread 
  • 2Tbsp tomato pesto
  • 2 slices champagne ham 
  • 1/3 cup grated cheese of your choice 
  • Fresh basil, if desired
 

Method


Pastrami, cheese & mustard:

  1. On one slice of bread, lay down the pastrami, sauerkraut and grated havarti. Spread the remaining slice with the mustard, then place mustard side down on top of the sandwich. 
  2. Toast in a pan or in a sandwich press until golden brown and melted. Serve. 
Cheese & onion jam:

  1. On one slice of bread, spread the onion relish, and then spread cream cheese on the other slice. Top the onion jam with the sliced brie and rocket, season, then top with the remaining slice; cream cheese side down. 
  2. Toast in a pan or in a sandwich press until golden brown and melted. Serve. 
Ham, cheese & tomato pesto:

  1. On one slice of bread, spread the tomato pesto. Lay the ham and grated cheese on top, followed by the basil. Place the remaining bread slice on top.
