Soba noodle salad
This soba noodle salad is a refreshing, super quick and easy-to-make meal any day of the week. The noodles are coated in delicious ginger, soy and honey sauce and topped with toasted sesame seeds and fresh spring onions.

- 320g soba noodles
- ¼ cup soy sauce
- 2 Tbsp honey
- 1 Tbsp sesame oil
- 2 Tbsp grated fresh ginger
- 2 Tbsp rice vinegar
- 2 spring onions, sliced
- 3 Tbsp sesame seeds, toasted
Method
- Prepare the noodles per packet instructions, draining and rising under cold water once cooked.
- In a large bowl, combine a generous drizzle of oil with soy sauce, honey, sesame oil, ginger and rice vinegar.
- Add the soba noodles and toss to coat.
- Garnish with spring onion and sesame seeds. Serve immediately.
