Festive mandarin spinach and almond salad
Deliciously light and flavourful, this festive salad is just made to fit on your table. Fresh spinach leaves, mandarin and creamy avocado are drizzled with a lemon and honey dressing and topped with toasted almonds and pomegranate arils. It’s perfect for sharing this Christmas season alongside your favourite protein.

- 1 Tbsp honey
- 1 lemon
- ¼ cup extra virgin olive oil
- 1 clove garlic, minced
- 1 bag (120g) baby spinach
- 1 avocado, thinly sliced
- 3 mandarins, peeled
- ¼ cup pomegranate arils
- ⅓ cup sliced almonds, lightly toasted
Method
- To make the lemon and honey dressing, whisk together honey, the juice and zest of the lemon, oil and garlic in a small jug or bowl until well combined. Season with salt and pepper to taste.
- Arrange the spinach on a large serving platter and top with avocado.
- Cut the mandarin into segments and place on top of the salad with the pomegranate arils.
- Drizzle the lemon and honey dressing over the salad.
- Garnish with almonds, then serve and enjoy.
Top tip: Swap out the pomegranate arils for dried cranberries as a fun festive alternative.
