Chicken caesar-inspired salad
It’s hard to go wrong with this classic chicken caesar-inspired salad! Assembled with fresh crunchy lettuce leaves, grilled chicken and parmesan it’s made for summertime. Featuring a cheat’s caesar salad dressing, for an even quicker meal solution.

- 2 thick slices of crusty bread, diced
- 2 chicken breasts, cut in half horizontally
- 1 clove garlic, minced
- 2 anchovies, finely diced
- ½ cup Pams classic whole egg mayonnaise
- 1 tsp dijon mustard
- Juice of ½ lemon
- 50g parmesan cheese
- 1 large cos or Romaine lettuce, torn
Method
- Preheat your oven to 180°C fan bake. Place the bread on a baking tray, drizzle over olive oil and season with salt and pepper. Toss to combine then place in the oven to bake for 8-10 minutes or until golden brown, tossing halfway through.
- Bring a drizzle of olive oil to medium-high heat in a large frying pan. Season the chicken with salt and pepper and cook for 4-5 minutes on each side or until golden brown and cooked through. Set aside to rest before slicing.
- To make the Caesar salad dressing, add garlic, anchovies, mayonnaise, dijon mustard and lemon juice into a small bowl. Grate half of the parmesan and add to the dressing, then mix until well combined. Season with salt and pepper to taste.
- Place the torn lettuce leaves in a large bowl and toss it together with the Caesar salad dressing.
- Transfer the lettuce to a serving platter and top with the sliced chicken and croutons. Shave the remaining parmesan and sprinkle over the top before serving.
