Easy sausage and apple tray bake

Serves   4
Prep time: 15 mins
Cooking time: 50 mins

Welcome in the cooler months with this sweet and warming sausage and apple tray bake! Perfect for busy families or an easy weekend meal, this one-dish wonder will be on the table in under an hour. If you or your family don’t consume pork, try making this dish with chicken sausages for a delicious substitute!

Sausage bake

Ingredients

Method

Ingredients

  • 3 large parsnips, peeled
  • 2 Agria potatoes, peeled
  • 500g pork sausages
  • 2 red apples
  • Fresh herbs (we used sage and chopped rosemary)
  • 2 Tbsp runny honey

Method

  1. Preheat your oven to 180°C fan bake. Cut the parsnip and potatoes into even-sized chunks around 3cm in thickness, then place them into a roasting dish.
  2. Drizzle with olive oil or melted butter, then season with salt and pepper and toss to coat. Bake for 20 minutes.
  3. Place the sausages into a bowl. Cut the apple into wedges, discard the core, and place the pieces into the bowl with  the sausages. Drizzle with olive oil or melted butter and toss to coat.
  4. After the vegetables have been baked for 20 minutes, remove them from the oven and arrange the sausages and apple pieces into the dish. Bake for a further 30 minutes.
  5. Around 15 minutes before the baking time ends, sprinkle the fresh herbs over the bake and drizzle with the honey. Once the sausages have cooked through and the veggies are golden brown, serve while hot and enjoy.
Top Tip

For added goodness, you can fold spinach or kale through this bake, just before adding the herbs and honey in step five.
