- 1.3-1.5kg pork belly
Spicy Rub:
- 2 Tbsp ground paprika
- 1 Tbsp garlic powder
- 1 tsp chilli powder
- 1 tsp cayenne pepper
- 2 tsp ground cumin
- 2 tsp mustard powder
- 1 Tbsp caster sugar
- 1 Tbsp salt
- 2 tsp pepper
Method
- Pat the pork dry with a paper towel.
- Using a sharp knife, remove the rib bones, then cut the pork belly into 1.5cm slices.
- In a small bowl combine paprika, garlic powder, chilli powder, cayenne pepper, cumin, mustard powder, sugar, salt and pepper. Rub the paprika spice mix over the pork and set aside for 30 minutes.
- Meanwhile, preheat your oven to 200°C fan bake.
- Place the pork on a lined baking tray and cook for 30-35 minutes or until crispy and browned, turning halfway through.
- Set the pork aside on a plate to rest for 2 minutes before serving.
Top tip: Save time and purchase a premade spice rub in store to rub over your sliced pork belly.
