Ravioli with herbed ricotta
Tossed with red onion and sitting on top of a flavourful herbed ricotta, premade ravioli has never looked this good. Ready in 25 minutes or less, this easy weeknight meal is calling your name.

- 1 cup ricotta
- ¼ cup grated parmesan
- 1 lemon
- Large handful fresh herbs, roughly chopped (we used basil and parsley)
- 300g ravioli
- 1 red onion, sliced
Method
- In a medium bowl, combine ricotta, half the parmesan, lemon zest and half the herbs. Season with salt and pepper and stir well to combine.
- Cook the ravioli as per pack instructions. Cut the lemon into wedges.
- Bring a drizzle of oil to medium high heat in a large frying pan. Saute the onion for a few minutes or until beginning to soften.
- Add the pasta and toss well to combine.
- Spread the ricotta over plates, then top with the ravioli and onion. Garnish with the remaining parmesan and herbs. Serve with lemon wedges.
