Ravioli with herbed ricotta

Tossed with red onion and sitting on top of a flavourful herbed ricotta, premade ravioli has never looked this good. Ready in 25 minutes or less, this easy weeknight meal is calling your name.

  • 1 cup ricotta
  • ¼ cup grated parmesan
  • 1 lemon
  • Large handful fresh herbs, roughly chopped (we used basil and parsley)
  • 300g ravioli
  • 1 red onion, sliced

Method

  1. In a medium bowl, combine ricotta, half the parmesan, lemon zest and half the herbs. Season with salt and pepper and stir well to combine.
  2. Cook the ravioli as per pack instructions. Cut the lemon into wedges.
  3. Bring a drizzle of oil to medium high heat in a large frying pan. Saute the onion for a few minutes or until beginning to soften.
  4. Add the pasta and toss well to combine.
  5. Spread the ricotta over plates, then top with the ravioli and onion. Garnish with the remaining parmesan and herbs. Serve with lemon wedges.
Top tip: Grill some of your favourite veggies and toss through the pasta before serving (we used courgette)
