Lasagne soup
A relishing family-friendly one-pot packed full of flavour. This lasagne soup is made with beef mince and tender lasagne pasta cooked in an onion, garlic and tomato soup. Garnish with parmesan and fresh basil to complete the meal.

- 1 onion, diced
- 2 cloves garlic, minced
- 450g beef mince
- 510g jar Caramelised Onion and Garlic Pasta Sauce
- 1.5L chicken stock
- 2 tsp dried basil
- 1 tsp dried oregano
- 300g Value Lasagne Pasta
- ⅓ cup grated parmesan
- Handful of basil leaves
Method
- Bring a drizzle of oil to medium-high heat in a large frying pan. Sauté the onion and garlic for a few minutes or until softened.
- Add the beef mince and cook until browned, breaking up with a wooden spoon.
- Stir through the pasta sauce, chicken stock, basil and oregano. Season with salt and pepper.
- Bring to a boil, then add the lasagne pasta and cook for 10-15 minutes or until the pasta is tender.
- Garnish with parmesan and basil leaves before serving.
Tips:
- Dollop ricotta cheese or sour cream over the soup for a deliciously creamy twist.
