Keto bacon and chicken zucchini carbonara

One of the hardest things about a low-carb diet is missing out on carbonara! Our easy zucchini carbonara tastes great, and is sure to help ease those cravings. 

Tip: To make sure you’re getting your veg, serve with an easy garden salad.

  • 500g courgette noodles or fresh courgettes cut into ribbons (use a vege spiralizer or peeler).
  • 4 slices Pams Streaky Bacon, sliced 
  • 400g skinless chicken breast, cut into 2cm cubes 
  • 2 cloves garlic, finely sliced 
  • 2 Pams Free Range Egg yolks, lightly beaten 
  • ½ cup Pams Cream 
  • ½ cup grated parmesan 
  • 2 tablespoons finely chopped parsley

Method

  1. Blanch the courgette noodles in boiling salted water for one minute, drain well and pat dry with paper towels.
  2. Heat some oil in a large pan and fry the bacon over a medium-high heat until cooked, then set aside. Cook the chicken in the same pan until just cooked through, approximately 3-4 minutes, then set aside.
  3. Turn the element down to a medium-low heat, add the garlic to the pan, adding a little extra oil if necessary. Whisk together the egg yolks and cream, then add to the pan. Stir until slightly thickened.
  4. Add the bacon, chicken and noodles to the pan, toss well, then add half the parmesan, parsley and season with salt and pepper.
  5. Put into bowls and serve the remaining parmesan alongside.
