Keto bacon and chicken zucchini carbonara
One of the hardest things about a low-carb diet is missing out on carbonara! Our easy zucchini carbonara tastes great, and is sure to help ease those cravings.
Tip: To make sure you’re getting your veg, serve with an easy garden salad.

- 500g courgette noodles or fresh courgettes cut into ribbons (use a vege spiralizer or peeler).
- 4 slices Pams Streaky Bacon, sliced
- 400g skinless chicken breast, cut into 2cm cubes
- 2 cloves garlic, finely sliced
- 2 Pams Free Range Egg yolks, lightly beaten
- ½ cup Pams Cream
- ½ cup grated parmesan
- 2 tablespoons finely chopped parsley
Method
- Blanch the courgette noodles in boiling salted water for one minute, drain well and pat dry with paper towels.
- Heat some oil in a large pan and fry the bacon over a medium-high heat until cooked, then set aside. Cook the chicken in the same pan until just cooked through, approximately 3-4 minutes, then set aside.
- Turn the element down to a medium-low heat, add the garlic to the pan, adding a little extra oil if necessary. Whisk together the egg yolks and cream, then add to the pan. Stir until slightly thickened.
- Add the bacon, chicken and noodles to the pan, toss well, then add half the parmesan, parsley and season with salt and pepper.
- Put into bowls and serve the remaining parmesan alongside.
