Individual microwave mac and cheese
When that feeling for comforting mac and cheese hits, this is the perfect snappy solution. An individual portion, made within minutes in the microwave. Great as a snack or side dish for one. Top with a sprinkle of chopped chives and cracked pepper.

- ½ cup macaroni pasta
- ¾ cup water
- 1 Tbsp butter
- ½ cup grated cheese (we like tasty cheese)
- 2 tsp flour
- ¼ cup milk
Method
- Combine the macaroni and water in a microwave-safe bowl or large mug and microwave for 6 minutes, stirring halfway through.
- In a separate bowl, mix together the grated cheese and flour. Add to the macaroni along with the butter. Pour over the milk, season to taste with salt and pepper mix to combine.
- Microwave for 1-3 minutes until the cheese has melted and the sauce has thickened.
- Enjoy as is or add your favourite toppings.
Top tip: Mix it up and make your own variation by mixing through cooked broccoli or bacon, chopped tomato and fresh herbs or sprinkle with toasted panko bread crumbs for a crunchy topping.
