French onion pasta
Deeply delicious caramelised onions make this French onion pasta an extraordinary one-pot meal. It’s a relishing family-favourite of creamy, cheesy penne pasta with thyme and a touch of sweetness from the onions.

- 50g butter
- 3 large onions, thinly sliced
- 3 cloves garlic, minced
- 3 ½ cups beef stock
- 500g dried penne pasta
- 2 Tbsp fresh thyme leaves
- ¼ cup cream
- 1 cup tasty cheese
Method

Melt the butter with a drizzle of olive oil over medium-high heat in a large pot. Add the onions and cook while stirring occasionally for 10-15 minutes or until the onions have softened.

Stir through the garlic and season with salt. Cook, while stirring for 10 minutes or until caramelised and golden.

Deglaze the pan with half a cup of stock, then add the pasta, thyme, remaining beef stock and three cups of water. Stir to combine, then bring to a simmer. Cook for 10-15 minutes or until the pasta is al dente.

Stir through the cream and tasty cheese, then remove from the heat.

Divide into bowls, serve and enjoy!
Top tip: Easily make this pasta vegetarian by swapping out the beef stock for vegetable stock.
