Bacon mac and cheese toasties
Creamy bacon mac and cheese sandwiched between two slices of bread and grilled until golden.

- 150g macaroni pasta
- 4 bacon rashers, diced
- ½ onion, diced
- 1 cloves garlic, minced
- 2 Tbsp flour
- 1 cup milk
- 1 cup grated cheese
- Mayonnaise
- 8 slices of your favourite bread
Method
- Cook the macaroni according to the packet instructions.
- Bring a large saucepan with a drizzle of oil to medium-high heat. Cook the bacon, onion and garlic for 5 minutes or until the bacon begins to crisp. Stir through the flour and cook for a minute.
- Gradually pour in the milk while stirring. Cook for 5 minutes or until the sauce has thickened. Stir through the pasta and cheese. Season with salt and pepper.
- Bring a large frying pan to medium-high heat. Spread mayonnaise over each slice of bread. Place a slice of bread mayonnaise side down in the frying pan. Top with spoonfuls of mac and cheese and place another slice of bread, mayonnaise side up on top.
- Cook for 2-3 minutes on each side or until golden brown and heated through. Serve and enjoy.
