Bacon mac and cheese toasties

Creamy bacon mac and cheese sandwiched between two slices of bread and grilled until golden.

Ingredients

  • 150g macaroni pasta

  • 4 bacon rashers, diced

  • ½ onion, diced

  • 1 cloves garlic, minced

  • 2 Tbsp flour

  • 1 cup milk

  • 1 cup grated cheese

  • Mayonnaise

  • 8 slices of your favourite bread

Method

  1. Cook the macaroni according to the packet instructions.

  2. Bring a large saucepan with a drizzle of oil to medium-high heat. Cook the bacon, onion and garlic for 5 minutes or until the bacon begins to crisp. Stir through the flour and cook for a minute.

  3. Gradually pour in the milk while stirring. Cook for 5 minutes or until the sauce has thickened. Stir through the pasta and cheese. Season with salt and pepper.

  4. Bring a large frying pan to medium-high heat. Spread mayonnaise over each slice of bread. Place a slice of bread mayonnaise side down in the frying pan. Top with spoonfuls of mac and cheese and place another slice of bread, mayonnaise side up on top.

  5. Cook for 2-3 minutes on each side or until golden brown and heated through. Serve and enjoy.
