15 minute pesto and broccoli gnocchi
This recipe is a quick fix for a busy weeknight and is a tasty way to get your veggies in. Store-bought gnocchi and pesto teamed up with fresh broccoli makes for a magnificent meal in minutes.

- 500g gnocchi
- 1 small broccoli, cut into small florets
- ½ cup basil pesto
- ¼ cup grated parmesan
Method
- Cook the gnocchi in a large pot of water as per the pack instructions, reserving half a cup of water before draining.
- Bring a large pan to medium-high heat with a drizzle of olive oil. Sauté the broccoli florets for 3-4 minutes, or until tender.
- Add the cooked gnocchi and pesto to the pan and toss until heated through. If needed, thin the sauce with some of the reserved water and season with salt and pepper.
- Spoon into serving bowls, top with grated parmesan and serve immediately.
