- 1 Simply Dinner "The Ultimate Chilli" Kit (the kit includes 500g Annabel's go-to smokey Mexican sauce, 400g beef mince, can of black beans, 120g grated cheese, can of corn kernels and rice).
- Salt
- Pepper
- Oil
Optional extras
- Corn chips
- Fresh coriander
- Jalapeños
- Sour cream
Method
If using optional ingredients, please read cooking method fully before starting to cook.
- Place rice in a large pot with 2 ¼ cups water and a little salt. Bring to a boil over a high heat, stir, then cover and reduce to lowest heat. Cook for 13 minutes then turn off the heat and allow to stand without lifting the lid.
- In a large, deep frypan heat oil and fry mince over high heat pressing it flat with the back of your spoon to break up into small pieces. Season with salt and pepper.
- Add Annabel’s Go to Smokey Mexican sauce, and ½ cup water and stir to combine. Reduce heat to a low simmer.
- Tip beans and corn into a colander, rinse and drain. Add to the sauce, and simmer for 10 minutes over low heat, stirring occasionally.
To Serve
Transfer the chilli to a serving dish and garnish with cheese. Fluff the rice with a fork. Place in a separate bowl or spread out in a mound under the chilli. Enjoy!
Optional
Serve with corn chips on the side. Garnish with a dollop of sour cream, fresh coriander and Jalapeños if using.
Annabel's tip: "If you want to spice this up, add a pinch of chilli flakes, or finely chopped fresh chilli or a dollop of your favourite hot sauce."
