Ratatouille Tray Bake with Sausage

Ingredients

Method

Ingredients

  • 1 eggplant
  • 2 courgette
  • 1 onion, cut into wedges
  • 4 garlic cloves, sliced
  • 2 Tbsp dried mixed herbs
  • 1 can (400g) diced tomatoes
  • 6 sausage of your choice
  • Crusty bread, sliced

Method

  1. Preheat your oven to 200°C fan bake. Cut the eggplant and courgette into 1cm slices, then place in a large bowl with the onion and garlic. Drizzle generously with olive oil, sprinkle over the herbs, then season and toss to combine.
  2. Spread the diced tomatoes into the base of a large roasting dish then season and top with the vegetables.
  3. Bake for 15 minutes, then carefully remove the tray from the oven and nestle the sausages into the vegetables. Bake for a further 30 minutes or until the vegetables are tender and the sausages have cooked through.
  4. Toast slices of crusty bread with a drizzle of olive oil, then serve alongside the cooked traybake while hot.

Top tip: Make a delicious fresh herb seasoning to garnish your toasty tray bake by mixing together a quarter cup of torn fresh basil and parsley leaves with one finely chopped garlic clove and a quarter cup of olive oil. Season to taste.
