Ratatouille tray bake with sausages
Put a tasty twist on the classic French dish ratatouille with the addition of sausages in our easy tray bake. This warming recipe is a comforting dinner packed full of nourishing veggies. Even better, it pairs perfectly with crusty bread to soak up all the flavour-packed juices remaining in the pan.

- 1 eggplant
- 2 courgette
- 1 onion, cut into wedges
- 4 garlic cloves, sliced
- 2 Tbsp dried mixed herbs
- 1 can (400g) diced tomatoes
- 6 sausage of your choice
- Crusty bread, sliced
Method
- Preheat your oven to 200°C fan bake. Cut the eggplant and courgette into 1cm slices, then place in a large bowl with the onion and garlic. Drizzle generously with olive oil, sprinkle over the herbs, then season and toss to combine.
- Spread the diced tomatoes into the base of a large roasting dish then season and top with the vegetables.
- Bake for 15 minutes, then carefully remove the tray from the oven and nestle the sausages into the vegetables. Bake for a further 30 minutes or until the vegetables are tender and the sausages have cooked through.
- Toast slices of crusty bread with a drizzle of olive oil, then serve alongside the cooked traybake while hot.
Top tip: Make a delicious fresh herb seasoning to garnish your toasty tray bake by mixing together a quarter cup of torn fresh basil and parsley leaves with one finely chopped garlic clove and a quarter cup of olive oil. Season to taste.
