Ham and cheese stuffed baked potatoes
A delicious, budget-friendly take on the humble baked potato. Stuffed full of ham and oozing with melted cheese, these are sure to be a family favourite. These tasty baked potatoes are best served hot with a fresh salad or sauteed greens.

- 4 medium potatoes
- 100g Pams edam cheese, sliced
- 80g shaved ham slices
Method
- Preheat your oven to 180°C fan bake. Make 6 even slices into each potato, about two-thirds of the way through, being careful not to slice all the way through to keep the potato intact.
- Place on a lined baking tray and brush with oil. Bake for 50-60 minutes or until tender when pierced with a knife.
- Leave to cool for a few minutes before slightly pushing open the slices in the potatoes to make room for the filling. Cut the slices of cheese into pieces about the size of the slices in the potatoes.
- Place a piece of cheese in every second slice and fill the remaining slices with the ham. Season with salt and pepper.
- Return to the oven for 8-10 minutes until the cheese is melted and serve hot.
Top tip:
For an easy way to slice your potatoes, place them between two chopsticks when slicing and they will prevent you from cutting all the way through.
