Quick honey soy chicken
This dish is your weeknight saviour. Quick, easy and budget friendly with only handful of ingredients but oh so delicious. Chicken pieces simmered in a simple honey soy sauce, served over rice and ready in 20 minutes.

- 600g boneless chicken, diced
- ⅓ cup honey
- ¼ cup soy sauce
- 3 cloves garlic, minced
- 2 tsp minced ginger
- 1 ½ cups white rice
Method
- Cook the rice as per the pack instructions.
- In a large bowl mix together the chicken, honey, soy sauce, garlic and ginger.
- Heat a drizzle of olive oil in a frying pan over medium to high heat. Use tongs to add the chicken and cook for 1-2 minutes on each side.
- Pour the remaining marinade over the chicken, lower the heat to a simmer and cook for 3-5 minutes, while stirring, until the sauce thickens.
- Divide the rice between four bowls, top with the honey soy chicken and spoon over any remaining sauce.
Top tip: For extra flavour and texture, garnish your dish with sesame seeds and chopped spring onion.
If you like spice, add a teaspoon or two of chilli flakes into the bowl with the chicken.
