Greek-inspired lamb chops with tzatziki

- ⅓ cup extra virgin olive oil
- 1 Tbsp dried oregano
- 2 lemons, zest & juice (plus extra wedges for serving)
- 5 cloves garlic, crushed
- 4 lamb shoulder chops, room temperature
- ½ a cucumber
- ⅓ cup Greek yoghurt
- 1 large handful mint or dill, roughly chopped (plus extra for serving)
Method
- Whisk together the olive oil, oregano, zest and juice of 1 lemon, 4 cloves of crushed garlic and a big pinch of salt. Slather over the lamb chops and leave to marinate for at least 10 minutes, or longer for maximum flavour.
- For the tzatziki, grate the cucumber and squeeze out any excess moisture.
- In a medium bowl whisk together the cucumber, yoghurt, fresh herbs, remaining garlic, zest and juice of 1 lemon and a glug of olive oil. Season with salt & pepper and place in the fridge until ready to serve.
- Pre-heat your BBQ or fry pan to a medium-high heat and grill the lamb chops for 5-6 minutes each side, or until cooked to your liking.
- Serve with the tzatziki sauce, lemon wedges and garnish with extra fresh herbs.
Top tip: Serve alongside a classic Greek salad and a side of toasted pita bread.
