Greek-inspired lamb chops with tzatziki

Fire up the BBQ for these Greek-inspired chops and enjoy this simple, refreshing spring dish!

Greek-inspired lamb chops with tzatziki

  • ⅓ cup extra virgin olive oil
  • 1 Tbsp dried oregano
  • 2 lemons, zest & juice (plus extra wedges for serving)
  • 5 cloves garlic, crushed
  • 4 lamb shoulder chops,  room temperature   
  • ½ a cucumber
  • ⅓ cup Greek yoghurt 
  • 1 large handful mint or dill, roughly chopped (plus extra for serving)

Method



  1. Whisk together the olive oil, oregano, zest and juice of 1 lemon, 4 cloves of crushed garlic and a big pinch of salt. Slather over the lamb chops and leave to marinate for at least 10 minutes, or longer for maximum flavour.
  2. For the tzatziki, grate the cucumber and squeeze out any excess moisture. 
  3. In a medium bowl whisk together the cucumber, yoghurt, fresh herbs, remaining garlic, zest and juice of 1 lemon and a glug of olive oil. Season with salt & pepper and place in the fridge until ready to serve. 
  4. Pre-heat your BBQ or fry pan to a medium-high heat and grill the lamb chops for 5-6 minutes each side, or until cooked to your liking. 
  5. Serve with the tzatziki sauce, lemon wedges and garnish with extra fresh herbs.

Top tip: Serve alongside a classic Greek salad and a side of toasted  pita bread.
