Lemon and dill baked salmon
A stunning show-stopper centrepiece for your Christmas festivities. This lemon and dill baked salmon is made for sharing with your nearest and dearest. Infused with garlic, butter, lemon and fresh herbs it’s spectacular in both appearance and flavour. Delicious when served with crispy roast potatoes and a dressed leafy green salad topped with fresh cucumber, avocado and radish.

- 3 garlic cloves, minced
- 50g butter, melted
- 3 Tbsp fresh dill, chopped + extra to garnish
- 1-1.2kg whole salmon fillet
- 1 lemon, thinly sliced
- Fresh parsley
Method
- Preheat your oven to 180°C fan bake. Line a baking tray with tin foil, followed by a sheet of baking paper on top.
- In a small bowl mix the garlic, butter and dill until well combined.
- Place the salmon on the prepared baking tray and pat dry with a paper towel. Season with salt and pepper.
- Spoon over the garlic and dill butter over the salmon, then arrange the lemon slices on top. Place in the oven to bake for 20-25 minutes or until cooked to your liking.
- Garnish with parsley and extra dill fronds.
Top tip: Serve this lemon and dill baked salmon with a garlic yoghurt dressing! Simply combine two minced garlic cloves with a cup of yoghurt and the juice and zest of half a lemon. Season with salt and pepper to taste.
