Stone fruit and toasted almond cheats ice cream
This easy “cheats” ice cream is the perfect fresh and fruity dessert for hot summer days. Simply grab a tub of Pams Creamy Vanilla Ice Cream and some beautiful seasonal fruit, and in minutes transform it into your own tasty creation. No ice cream churner required!

- 1 Ltr Pams Creamy Vanilla Ice Cream
- 8 ripe stone fruit, sliced or diced (we use peaches, nectarines and apricots)
- ½ cup sliced almonds, toasted
Method
- Scoop the ice cream into a large bowl and leave to sit for 10 minutes, or until it is a soft spreadable consistency.
- Reserve a handful of stone fruit and almonds to garnish, and add the remaining fruit and almonds to the mixing bowl with the softened ice cream.
- Mix well to combine, pour into loaf tin and smooth to create a flat surface.
- Scatter the reserved stone fruit and almonds over the top and freeze overnight.
- Once frozen, use an ice cream scoop to serve.
