Individual strawberry shortcake trifles
Juicy strawberries, light sponge cake and whipped cream cheese make for the perfect no-bake summer dessert that will take you less than 20 minutes to prepare. Make this simple but tasty dessert look ever so elegant by serving these individual strawberry shortcake trifles in white wine glasses.

- 3 cups diced sponge
- 250g fresh strawberries, sliced
- 1 Tbsp caster sugar
- 250g cream cheese, room temperature
- ¼ cup icing sugar
- 1 tsp vanilla extract
- 200ml cream
Method
- Place the strawberries in a bowl, sprinkle over the caster sugar and stir to combine. Set aside.
- In a large bowl beat the cream cheese until smooth. Add the icing sugar and vanilla extract and mix until well combined. Pour in the cream and whip to soft peaks.
- Layer half of the sponge cubes into the base of four white wine glasses. Top with half of the strawberries and half of the cream mixture. Repeat the layers.
- Place in the fridge for at least an hour or overnight. Serve and enjoy.
Top tip: Garnish your elegant creations with fresh strawberries and shaved dark chocolate.
