Individual brownie berry shortcake
Elegant and indulgent these individual brownie berry shortcakes are heavenly. You’ll have them ready in under 30 minutes with our quick and easy hacks using premade chocolate brownie bits, whipped chocolate cream and fresh berries. Served in cocktail glasses, they’re delightful at any dinner party.

- 500ml cream
- 1 tsp vanilla extract
- ¼ cup icing sugar
- 3 Tbsp cocoa powder
- 600g premade chocolate brownie
- 400g fresh mixed berries + extra to garnish
Method
- Place the cream and vanilla in a large bowl and sieve in the icing sugar and cocoa powder. Whip to stiff peaks.
- Cut the brownie and berries into small cubes.
- Start layering your shortcakes by placing half of the brownie pieces in the base of 6 cocktail glasses. Top with half of the berries, followed by half of the whipped chocolate cream.
- Repeat the layers, then garnish the top with the extra berries. Serve and enjoy.
Top tip: Garnish with a sprig of mint for a pop of colour and a wonderful aroma.
All the elements of this divine dessert can be prepared in advance. Simply whip the cream, chop the berries and brownie before your guests arrive then assemble your shortcake just before serving.
