Caramel fudge

This creamy caramel fudge is the ultimate sweet treat with the added bonus that it is easy to make. Add some chopped nuts, dried fruit or marshmallows to your caramel fudge ingredients for a delicious change.

  • 125g unsalted butter
  • 2Tbsp Golden Syrup
  • 1 can HIGHLANDER Sweetened Condensed Milk
  • 1 cup Brown Sugar
  • 100 g NESTLÉ BAKERS’ CHOICE White Chocolate Melts

Cookware: Saucepan, slice tin (7x25cm)

Method

  1. In a saucepan add the unsalted butter, golden syrup, sweetened condensed milk and brown sugar. Stir over low heat until boiling, reduce heat, and simmer 10 minutes, stirring constantly.
  2. Remove from heat, add NESTLÉ BAKERS’ CHOICE White Chocolate Melts, mix until smooth.
  3. Pour your fudge mixture onto a baking paper or foil lined 7cm x 25cm slice tin, refrigerate until set. 
  4. Once set, remove from refrigerator and cut into small squares.
Recipe notes

Sugar – When it comes to fudge, the most important step is to watch your sugar closely. To avoid burnt caramel, make sure you heat the sugar mixture slowly over low heat and keeping stirring the mixture constantly. 

Golden syrup – If you don’t have golden syrup or can’t find it, just leave it out. Your fudge will taste slightly different but it will still be delicious. 
Recipe variations – To add some texture to your fudge, feel fee to add in your choice of nuts, dried fruits or marshmallows. Some of our favourite additions include pecans, peanuts, cashews and pistachios. Adding sea salt can also create a delicious salted caramel fudge. 

Storage – Carmel fudge is best kept in the fridge. It’ll need at least 3-4 hours to set, but if you can leave it overnight, that’s even better. This fudge can be stored in the refrigerator for up to two weeks or in the freezer for up to three months.

Can you use evaporated milk instead of condensed milk?
Unfortunately, you can’t use evaporated milk instead of condensed milk in fudge. It will be missing the rich, creamy taste you get from sweetened condensed milk.
