Vanilla and nutmeg panna cotta

This simple, yummy dessert is perfect for entertaining, as all the components can be made in advance. Roasting strawberries really intensifies their flavour beautifully.

  • 1 tablespoon powdered gelatin
  • 1 ½ cups milk
  • 2 cups cream
  • ¼ cup caster sugar
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 4 punnets strawberries, trimmed and halved
  • 3 tablespoons pure maple syrup
  • 2 tablespoons balsamic vinegar

Method

  1. Mix the gelatin with 1/3 cup of milk in a small bowl. Leave this for 5 minutes to “bloom”.
  2. Place the remaining milk in a medium saucepan along with the cream, sugar, nutmeg, and vanilla. Heat until hot but not bubbling.
  3. Add the gelatin and whisk until smooth. Leave to cool until just warm.
  4. Pour into 4 Spiegelau red wine glasses. Place in the fridge to set (about 4 hours).
  5. Preheat the oven to 180 degrees.
  6. Toss the strawberries with the maple syrup and vinegar until evenly coated. Place in an ovenproof dish and cook for 25 minutes. Leave to cool completely.
  7. Spoon some of the strawberries into each wine glass just before serving.
