Vanilla and nutmeg panna cotta
This simple, yummy dessert is perfect for entertaining, as all the components can be made in advance. Roasting strawberries really intensifies their flavour beautifully.

- 1 tablespoon powdered gelatin
- 1 ½ cups milk
- 2 cups cream
- ¼ cup caster sugar
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 4 punnets strawberries, trimmed and halved
- 3 tablespoons pure maple syrup
- 2 tablespoons balsamic vinegar
Method
- Mix the gelatin with 1/3 cup of milk in a small bowl. Leave this for 5 minutes to “bloom”.
- Place the remaining milk in a medium saucepan along with the cream, sugar, nutmeg, and vanilla. Heat until hot but not bubbling.
- Add the gelatin and whisk until smooth. Leave to cool until just warm.
- Pour into 4 Spiegelau red wine glasses. Place in the fridge to set (about 4 hours).
- Preheat the oven to 180 degrees.
- Toss the strawberries with the maple syrup and vinegar until evenly coated. Place in an ovenproof dish and cook for 25 minutes. Leave to cool completely.
- Spoon some of the strawberries into each wine glass just before serving.
