Philadelphia Baked Berry Cheesecake

- 2 x 133g Oreo Original Cookies
- 2 Tbsp unsalted butter, melted
- 500g Philadelphia cream cheese original block, softened
- ¾ Cup Caster sugar
- ¾ Cup sour cream
- 3 Large eggs
- 2 Tbsp cornflour
- 3 punnets Mixed berries (blueberries, raspberries, blackberries)
- 1 packet Cadbury strawberry filled eggs
Method
1. Preheat oven to 140C fanforced. Grease and line a 22cm springform cake tin.
2. Place Oreo cookies in food processor and blitz to make crumbs. Add melted butter and pulse to combine. Press into the base of the cake tin and chill in fridge for 20 minutes.
3. Beat cream cheese, sugar, sour cream and eggs until thick and smooth. Mix in cornflour and berries, reserving some for decorating the top of the cake.
4. Pour into prepared tin and bake for 60 minutes. Cool on wire rack.
