Mexican-spiced chicken kebabs
You’ll want to be grilling these Mexican-spiced chicken kebabs at your next summer BBQ. Marinated in a tasty premade spice mix with garlic and citrus, the aroma alone will get your guests salivating. Make it an abundant meal with grilled tortillas, guacamole, sour cream and fresh coriander.

- 500g boneless chicken thigh, cut into bite size pieces
- 1 pack (40g) Mexican spice mix
- 3 cloves garlic, minced
- 3 tbsp lemon or lime juice
- 1 red onion, cut into chunks
- 2 capsicum, cut into chunks
- Salad of your choice (we used a slaw with corn chip sprinkles anda creamy dressing)
Method
- 1. In a large bowl, combine chicken, Mexican spice mix, garlic, lemon juice, a drizzle of olive oil, salt and pepper. Stir until well combined, then cover and set aside in the fridge to marinate for at least 30 minutes.
- Thread the chicken onto soaked kebab skewers with the red onion and capsicum.
- Grill the skewers on a preheated BBQ or grill pan over medium high heat until tender and cooked through.
- Dress the salad as desired, then serve with the grilled skewers.
- Serve and enjoy.
Top tip: Thread sliced lemon on your kebab with the chicken and vegetables for a touch of extra citrus.
