Lemon and feta chicken drumsticks
Great for an outdoor setting, these Greek-inspired lemon and feta chicken drumsticks are super succulent and great to nibble on. Dressed with a lemon parsley dressing and crumbled feta, they’re packed with punchy flavours. Make it a meal with a side of Greek salad tossed with crispy lettuce leaves.

- 8 chicken drumsticks
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 2 lemons
- Large handful of fresh parsley, roughly chopped
- 100g feta
Method
- In a large bowl combine drumsticks, two garlic cloves, oregano, the juice and zest of one lemon and a drizzle of olive oil. Season with salt and pepper. Cover and place in the fridge to marinade for 2-4 hours.
- Grill the drumsticks over medium heat on a preheated and oiled BBQ or grill pan for 30 minutes or until cooked through.
- To make the dressing, whisk together a drizzle of olive oil, the zest and juice of the remaining lemon, the remaining garlic and half of the parsley. Season with salt and pepper.
- Spoon the dressing over the drumsticks, crumble over the feta and sprinkle over the remaining parsley. Serve and enjoy.
Top tip: These drumsticks can also be cooked in the oven on a wire rack on top of a baking tray for a hands-free alternative. Cook in a preheated oven at 200°C fan bake for 25 minutes or until cooked through and golden brown.
