Classic coronation chicken
Covered in creamy yoghurt mayonnaise with mango chutney, curry powder and raisins, this classic coronation chicken is so easy to make. Serve it as a sandwich filler, over a baked potato or in a salad with some leafy greens for an uncomplicated meal.

- ¾ cup mayonnaise
- ½ cup Greek yoghurt
- ¼ cup mango chutney
- 1 ½ Tbsp curry powder
- ⅓ cup raisins
- 4 cups shredded chicken
Method
- In a large bowl combine mayonnaise, Greek yoghurt, mango chutney, curry powder and raisins. Season with salt and pepper to taste.
- Fold the chicken through the mixture until well combined.
- Serve and enjoy!
Tips:
- Add two finely diced celery sticks and half a cup of diced dried apricots with the raisins for extra crunch and sweetness. Garnish with fresh coriander and toasted sliced almonds for a satisfying meal.
