Chicken kabobs with chilli and lime
Everybody will be entertained with these fresh chilli and lime chicken kabobs straight off the BBQ. Marinated to infuse all the drool worthy flavours, they’re worth the wait and completely worthy of an summer outdoor party.

- 500g chicken thighs, cut into bite-size pieces
- 2 limes
- ½ red chilli, thinly sliced
- 2 cloves garlic, minced
- 1 tsp onion powder
- ½ tsp ground paprika
- Large handful of fresh coriander, roughly chopped, plus extra for serving
Method
- In a large bowl combine chicken, the juice and zest of one lime, chilli, garlic, onion powder, paprika, coriander and a drizzle of oil. Season with salt and pepper and stir well to combine. Cover and set aside in the fridge to marinate for at least 1 hour or overnight.
- Preheat your BBQ or a large grill pan to medium-high heat and brush with oil.
- Thread the chicken onto soaked skewers.
- Grill the skewers for 3-4 minutes on each side or until browned and cooked through.
- Cut the remaining lime into wedges. Garnish the skewers with extra fresh coriander, then serve with lime wedges.
