Biryani-inspired slow cooker chicken
It’s the season for slow cooking and this biryani-inspired chicken makes for great comfort food. Steamed rice layered on top of beautifully spiced chicken and sautéed onions.

- 4 cloves garlic, minced
- 3 Tbsp grated fresh ginger
- 1 cup Greek yoghurt
- 2 ½ Tbsp curry powder
- 4 whole chicken legs
- 2 onions, sliced
- 2 cups Basmati rice, rinsed
Method
- In a large bowl combine garlic, ginger, yoghurt, curry powder, salt and pepper. Stir to combine then add the chickens and toss to coat. Set aside in the fridge to marinate for a minimum of 30 minutes or overnight.
- Bring a drizzle of oil to medium-high heat in a medium fry pan. Sauté the onion for a few minutes or until beginning to soften, then transfer to a slow cooker. Next, add the chicken with all of the marinade. Cook on high for 2 ½ hours.
- Meanwhile, bring three cups of water to a boil in a medium saucepan. Add the rice and boil for 3-4 minutes or until the rice is par-cooked, then drain.
- Once the chicken has cooked for 2 ½ hours, sprinkle over the rice and use the back of a spoon to level the rice in an even layer on top.
- Cook for a further 1-1 ½ hours or until the rice is cooked and the chicken is cooked through. Serve and enjoy.
Tips:
- Add a can of diced tomatoes or a cup of diced fresh tomatoes in the slow cooker with the chicken to bulk up this meal.
- Finish off this beautiful biryani-inspired chicken with fresh coriander or mint.
