How to cook chicken on the BBQ

  • 1kg chicken – cuts that are great on the BBQ drumsticks, wings or thighs

Spice rub:

  • ¼ cup brown sugar
  • 2 Tbsp smoked paprika
  • ½ tsp cayenne pepper
  • 3 tsp garlic powder
  • 3 tsp onion powder
  • 3 tsp dried oregano
  • Salt and pepper
  • Olive oil

  • You could also add a premade spice rub of your choice
  •  

     

    Method

    1. Preheat your BBQ to medium heat.
    2. Prepare the spice rub, by combining brown sugar, smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, salt and pepper in a small bowl.
    3. For drumsticks: Pat dry with a paper towel and use a sharp knife to score the chicken lightly. Sprinkle over the spice rub and rub into the chicken.

      For chicken wings and thighs
      : Pat dry with a paper towel, sprinkle over the spice rub and rub into the chicken.
    1. Brush your BBQ with oil, then place the chicken on the BBQ.
    2. Cover and cook for 25-30 minutes for chicken drumsticks and wings and 10-15 minutes for thighs, or until the juices run clear and the internal temperature of the thickest part reaches 75°C, turning often.
    3. Set the chicken aside to rest for 5-10 minutes before serving.
