- 1kg chicken – cuts that are great on the BBQ drumsticks, wings or thighs
Spice rub:
- ¼ cup brown sugar
- 2 Tbsp smoked paprika
- ½ tsp cayenne pepper
- 3 tsp garlic powder
- 3 tsp onion powder
- 3 tsp dried oregano
- Salt and pepper
- Olive oil
Method
- Preheat your BBQ to medium heat.
- Prepare the spice rub, by combining brown sugar, smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, salt and pepper in a small bowl.
- For drumsticks: Pat dry with a paper towel and use a sharp knife to score the chicken lightly. Sprinkle over the spice rub and rub into the chicken.
For chicken wings and thighs: Pat dry with a paper towel, sprinkle over the spice rub and rub into the chicken.
- Brush your BBQ with oil, then place the chicken on the BBQ.
- Cover and cook for 25-30 minutes for chicken drumsticks and wings and 10-15 minutes for thighs, or until the juices run clear and the internal temperature of the thickest part reaches 75°C, turning often.
- Set the chicken aside to rest for 5-10 minutes before serving.
