Smashed avocado and poached eggs on hash browns

Enjoy a cafe-style brunch at home with this easy fakeaway breakfast recipe. Smashed avocado with lemon and feta, and a poached egg on top of crispy hash browns. Pour a glass of orange juice or your favourite hot brew and settle in for a morning meal that’s a little bit fancy.

  • 4 hash browns
  • 1 avocado
  • ½ lemon
  • 100g feta, crumbled
  • 2 eggs

Method

  1. Cook the hash browns in the oven or air fryer as per pack instructions. 
  2. Scoop the flesh of the avocado into a small bowl and use a fork to smash. Mix through the juice of the lemon and two-thirds of the feta, generously season with salt and pepper and set aside.
  3. Heat a saucepan of water and poach the eggs to your liking.
  4. To assemble, place the cooked hash browns on two serving plates, spoon on the smashed avocado and top with a poached egg. Sprinkle over the remaining feta, season with salt and pepper and finish with a drizzle of olive oil if you wish.

Top tip: Add a touch of freshness by finishing your breakfast masterpiece with fresh mint leaves and quartered cherry tomatoes.
