Cheesecake french toast roll ups
Gather the tamariki in the kitchen over the school holidays to make a batch of these cheesecake french toast roll ups. They’re a quick and easy breakfast or snack filled with cream cheese and seasonal fresh fruit.

- 2 eggs
- ¼ cup milk
- 1 tsp ground cinnamon
- 14 slices bread of your choice (we used wholemeal)
- 1 cup cream cheese, softened
- Seasonal sliced fruit of your choice (we used banana, apple and strawberry)
Method
- In a shallow bowl, whisk together eggs, milk and cinnamon.
- Cut the crusts off the bread slices if desired and use a rolling pin to flatten each piece.
- Spread a tablespoon of cream cheese on each slice of bread, top with sliced fruit and roll up tightly.
- Bring a large frying pan to medium heat with a knob of butter. Dip the rolls into the egg mixture, then cook for a few minutes on each side or until golden brown.
- Serve and enjoy.
Any leftover crusts can be blended into breadcrumbs and use to make hidden veggie cheeseburgers or BBQ meatball rolls.
