Best fluffy pancakes
Words cannot describe just how sensational these fluffy pancakes are! They’re the best breakfast food any day of the week. Our tamariki are particularly fond of this one.

- 1 cup plain flour
- 2 tsp baking powder
- ¼ tsp baking soda
- 2 Tbsp caster sugar
- 1 egg, beaten
- ¾ cup Value milk
- 2 Tbsp pure butter, melted + extra for cooking
Method
- In a large bowl, sieve the flour, baking powder, baking soda and caster sugar. Whisk to combine.
- Create a well in the centre of the flour and add the egg, milk and butter. Stir until just combined.
- Bring a large frying pan to low-medium heat. Grease with melted butter, then add spoonfuls of the pancake batter to the pan.
- Cook for a few minutes or until bubbles appear on the surface, then flip and cook for a further few minutes until cooked through.
- Serve and enjoy.
Top tips:
- The trick to fluffy pancakes is to not overmix the batter and let it rest for a few minutes before adding to the pan.
- Cook your pancakes on a medium heat: hot enough to immediately make a drop of water sizzle.
- Flip your pancakes when bubbles form on the surface and stay open.
- Wipe the pan off every few pancakes and add fresh butter to avoid that burnt-butter-taste.
